No Bake Pumpkin Chocolate Chip Energy Bites

These no-bake power bites are prepared in minutes and make for the fantastic mid-day snack or tasty dessert.

Diet Gluten Free, Vegetarian
  • 2 cups old fashioned oats
  • ½ cup peanut butter
  • ½ cup pumpkin puree
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon/ pumpkin pie spice
  • ½ cup mini semi-sweet chocolate chips
  • In a substantial bowl, combine oats, peanut butter, pumpkin, honey, vanilla, and cinnamon. Mix till it types a soft (but not sticky) mixture.

  • Once the mixture is workable, add the chocolate chips. Stir to combine.

  • With a substantial spoon, scoop mixture into hands and roll it into a ball. Repeat for the whole mixture.

  • Store in the fridge for up to a week or in the freezer.
