This basic but scrumptious Thai quinoa salad recipe functions terrific as a healthier and tasty option to a far more regular fried rice dish.

This is a seriously comforting meal that has lots of terrific flavors with the ginger, sesame, and coriander, and also a good small crunch from the cashews.

This recipe calls for lightly toasted cashews for added flavor, but you are welcome to hold them raw if you favor.

Here Is Your Crunchy Cashew Thai Quinoa Salad Recipe With a Mouthwatering Ginger Peanut Dressing:

Serves 2
 

Ingredients:

For the salad

  • 1 cup white quinoa
  • ¾ cup shredded red cabbage
  • ½ red bell pepper, diced
  • ¼ cup chopped coriander
  • 1 corn cob, kernels removed
  • ¼ cup fresh peas
  • ⅓ cup cashews (toasted or raw)

 

For the dressing:

  • ¼ cup all organic peanut butter
  • 2 tsp. freshly grated ginger
  • 3 Tbsp. soy sauce
  • 1 Tbsp. coconut nectar
  • 1 Tbsp. rice vinegar
  • 1 tsp. sesame oil
  • ⅛ cup water

 

Preparation

To make the dressing, blend all components till smooth and creamy. Set aside till prepared.

Place the quinoa in a saucepan or rice cooker and cover with 1½ cups water. Bring to a boil and then simmer for 10 to 15 minutes till the water has absorbed. Allow to sit for 10 minutes or so although you make the salad.
 

 
 
Place the cabbage, capsicum, coriander, corn, and peas in a huge bowl and mix properly.

If you want to toast the cashews, location them on a hot grill for 5 minutes or so, turning them to evenly cook. Be confident to hold an eye on them and get rid of from the heat after they are golden.

Add the quinoa and cashews to the vegetables and mix every little thing with each other. Add the dressing and mix one particular final time to combine. Garnish with cashews and coriander to serve.
