Ingredients

  • ½ cup oat flour
  • 3 eggs
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp of dried oregano
  • ½ cup grated parmesan
  • ½ cup garbanzo bean breadcrumbs*
  • 2 medium zucchini

Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Wash and thinly slice zucchini. Remove excess water with a paper towel and coat zucchini in oat flour.
  • In a small bowl, crack eggs.
  • In a separate small bowl, combine breadcrumbs, parmesan, oregano, onion powder, and garlic powder. Mix ingredients until full integrated.
  • Submerge the oat flour covered zucchini into the egg wash. Then, submerge it in the bread crumb mixture.
  • On a large oiled baking sheet, place the ready-to-bake zucchini coins.
  • Bake for 15 minutes.
  • Serve hot.
